In Sologne, in the Centre-Val de Loire region of France, the Auberge du Cheval Blanc is a former 17th-century half-timbered coaching inn, beautifully transformed into a hotel-restaurant. Ludovic Poyau wanted each of the 7 rooms to reflect the authentic soul of the place. Comfortable and bright, they open onto a courtyard, a flower-filled garden or a terrace. The chef, who has been awarded two "toques" by Gault et Millau, extends the bucolic discovery with recipes based on regional products and spices, accompanied by a Loire wine list. You can enjoy them by the fireplace in the dining room or on the terrace. You can also explore the region by bike or on foot. A horse-riding center is located a dozen kilometers away.
